Potatoes with Veggie (w/curry leaves) Masala Blend
Veggie (w/curry leaves) Masala Blend adds deliciousness to any vegetables. This blend has dehydrated curry leaves for added flavor.
Potatoes with Veggie (w/curry leaves) Masala Blend
(For two)
Ingredients
2 cups of peeled and chopped potato pieces or assorted veggies.
4-5 chopped cloves of garlic (optional)
1 tablespoon oil (any light oil or olive oil)
1 Tsp of Veggie (w/curry leaves) Masala Blend
Salt – Veggie (w/ curry leaves) Masala Blend has salt in it. Add more if needed.
½ cup of water

Heat the oil and add chopped potatoes and garlic.
Add water. Let it cook for 10 minutes on medium to low flame.
Stir every 3-4 minutes to avoid burning and sticking to the bottom of the pot.
Potatoes are cooked when they are easily smashed with a spoon.
Add 1 Tsp of Veggie (w/curry leaves) Masala Blend.
Mix it until it all blends in together.
Turn off the stove and cover the pot to sweat the potatoes and spice blends for 5 minutes.
Just before serving add cilantro on top as garnish (cilantro is optional).
Enjoy with tortilla, roti, pita chips or as salad.
