Eggplant with Veggie Masala Blend


Eggplant when cooked traditionally has a delicious aroma and texture. Add Veggie Masala Blend to Eggplant to make it even tastier.

 

Eggplant with Veggie Masala Blend
        (For two)
 
Ingredients
2 cups of chopped eggplant (with or without skin) Eggplant can be replaced with any veggies or meat.
2 medium or 1 large onion
2 medium or 1 large tomato
4-5 garlic cloves
1 medium red pepper (optional)
1/2 cup green peas (optional)
1 tablespoon oil (vegetable/ light oil or olive oil)
1 Tsp of Veggie Masala Blend
Salt – Veggie Masala Blend has salt in it. Add more if needed.
 
Step by Step Recipe
Cut eggplant in small cube size pieces. Peeling the skin of the Eggplant is optional.
Dice the tomato and onion separately (finely chopped or small pieces)
Garlic pieces can be added (optional)
Heat the oil and add chopped onion and garlic.
Sautee the onion until it turns golden brown or starts to caramelize.
Add chopped tomatoes, red pepper, green peas and eggplant.
Add ½ cup water. Let it cook for 10-15 minutes on low flame.
Stir every 5 minutes to avoid burning and sticking to the pan.
Eggplant starts to soften.
Add 1 tsp of Veggie Masala Blend. Mix it all.
Let it simmer for a 1minute on very low flame, until it all blends in together.
Just before serving add cilantro on top as garnish (cilantro is optional).
Enjoy with garlic bread, naan, roti, rice, and pita chips.
